What inspires you?

Flavours and aromas.

How do you express yourself?

Through the drinks I create.

Does what you wear reflect your personality?

Absolutely. It has to be comfortable, functional and look good as well. First impressions count for a lot.

What article of clothing can’t you live without?

My Ray Steels leather apron. I have only had it for about a year, but I just don’t feel quite right being behind the bar without it on now.

I’ll leave that to the experts.

Is there an “Australian style” for men?

I believe Australian style for men is a combination of classic work wear elements, denims and cottons, put together with enough care to impress, without spending more time than your other half getting ready.

Got body art?

Yeah just one tattoo, 3/4 of my upper arm. It’s a fleur de lys, which is off my family crest, with some rococo filigree.

Favourite place to eat?

Everyday eating, probably Fratelli Paradiso and Momofuku Seiobo for the most exciting flavours in town.

Where are your favourite places to shop?

Alfie’s Friend Rolfe in Darlinghurst

What music are you listening to?

A lot of rock, working in a rock and roll bar for the last 2 years has greatly improved my rock knowledge and appreciation.

Who has more style: Sydney or Melbourne?

Melbourne probably has more style, but its only because Sydney doesn’t need to try so hard.
